You can configure Outlook to display messages in the message list using only one line instead of two by clicking View, Arrange By, and Custom. Click Other Settings, and then uncheck the box reading Use Multi-line Layout In Widths Smaller Than X Characters. Change the value of X to have Outlook use single-line layouts on wide screens and multi-line layouts on narrow ones.
